Paleo Blueberry Muffins

Ingredients

1 cup almond flour
½ tsp baking soda
½ tsp baking powder
pinch of salt
3 eggs
1/3 cup honey
1 cup natural almond butter
1/3 cup coconut oil, melted
1 lemon, zested
1 cup fresh blueberries

For the crumb topping:
1/4 cup almond flour
2 tbsp unsweetened finely shredded coconut
1 tbsp honey
1 tbsp coconut oil, softened
1 tbsp almonds, chopped

Directions

1. Preheat oven to 350ºF. Line a 12-cup muffin pan with paper cups. Set aside.

2. Wash the blueberries and gently pat dry with kitchen towel. Set aside.

3. In a bowl combine the almond flour, baking soda and pinch of salt. Set aside.

4. In the bowl of a stand mixer fitted with the paddle attachment beat the eggs and honey until pale and fluffy, about 3-5 minutes. 1. In a saucepan place the sweet potatoes and cover with water. Bring to a boil over high heat then reduce the heat to medium, and simmer until the sweet potatoes are tender, about 20-25 minutes. Remove from heat and drain well. Return the sweet potatoes to the saucepan and mash with a potato masher until smooth. Set aside ½ cup and reserve the rest for another use.
